My thighs still aren't rubbing together as much as I'd like, so I've decided to make divinity to build up the fat for the holidays.
Two Recipes, No Waiting
You'll need a candy thermometer, a 2 quart (or more) pot, and a mixer
Mom's Divinity
2 c. sugar
1/2 c. light corn syrup
1/2 c. hot water (no temp given)
1/4 tsp salt

2 egg whites
1 tsp vanilla extract
Cook and stir the first four ingredients until sugar is dissolved and mixture boils. Boil to the hard ball stage (250-260 normally, I guess, but Mom said that 265 degrees [and less than 267! Ha] worked best for her) and remove from heat.
Separate the 2 egg whites from the yolks and beat in a bowl with mixer until stiff. Slowly add the hot syrup while mixing on high, should take about five minutes to add all of it and mix completely. Add vanilla and continue to beat by hand until the mixture forms soft peaks.
If you like nuts, add a 1/2 c. (chopped) of your favorite kind here. Then drop by spoonfuls onto waxed paper covering a cookie sheet. Let cool and enjoy.
Grandma's Divinity
1 1/2 c. sugar
1/4 c. light corn syrup
1/2 c. hot water
1/2 tsp white vinegar
-
1 egg white
1/2 tsp vanilla
Follow the instructions as above, except the temp. Cook to 260 degrees. Everything else is the same.
Gorge and feel your thighs swell!
